Bob’s Perfect Meatball Recipe

3 minced cloves of garlic

¼ c veg oil for frying

1 lb. ground meat (Bob uses equal parts beef, pork, and veal)

¼ c grated parmesan cheese 9 saltine crackers, (crush ‘em up fine)

½ t each of salt, black pepper, oregano, and dried basil

1 T chopped fresh parsley (gotta be fresh)

¼ c water

1 egg

1 t tomato paste

Heat oil over low heat in a large Dutch oven

In a big bowl add meat, garlic, cheese, crackers, spices

Mix with fingers; don’t be shy, get into it

In a small bowl whisk water egg and tomato paste

Add the two mixtures and mix lightly with fingers

Form into balls

Cook in batches until brown on both sides, about 5 minutes
